Vegan Blueberry Muffins


We are participating in a partial fast this month with our church. The fast is called the Daniel Fast, as it resembles how Daniel ate in the book of Daniel, chapter 1. This fast has different variations, but the particular model we are following is a vegan diet – with a few more restrictions such as no leavened bread and no chemicals or processed foods. I had some blueberries I needed to use, so I put together this recipe tonight for vegan blueberry muffins. They were so good! I hope you enjoy <3


2 – cups whole wheat flour
1 1/2 – teaspoons baking soda
1/2 – teaspoon salt
3/4 – cup pure maple syrup
1 – cup unsweetened, plain almond milk
1/2 – cup canola Oil
1 – teaspoon vanilla extract
1 – tablespoon apple cider vinegar
1 – cup blueberries, fresh
1 – cup, chopped nuts (optional)


Mix flour, baking soda, and salt in a medium sized bowl.

Mix maple syrup, almond milk, oil, vanilla extract, and vinegar in a separate, large bowl.

Combine dry mixture to the wet mixture in the large bowl and stir, just until mixed.

Carefully fold in the blue berries and nuts (optional).

Preheat oven to 375 and bake for 15 to 20 minutes, until golden brown on top.
