Egg Muffins Recipe

I had been wanting to try to make an egg muffins recipe for quite some time, but I just had not gotten around to it yet. 🙂 I’m so glad that I finally gathered up the ingredients and threw them together! They are were so simple to make and so yummy. A great source of protein and low on calories and basically carbohydrate free. I did decide to use cheese, so these won’t meet Paleo standards, but they are gluten free!

Minutes to Prepare: 10
Minutes to Cook: 20
Number of Servings: 12


6 eggs
1/2 cup chopped spinach
1/2 cup diced tomatoes
1/2 cup shredded cheese
Olive oil cooking spray


1. Coat a muffin pan with a generous layer of cooking spray.

2. Crack eggs into a small bowl. Mix in the spinach, tomatoes and cheese.

3. Pour into muffin pan.

4. Bake at 350 F for 20-25 minutes. Poke a toothpick into the middle of the muffins to make sure they are done!
