I typically am not a huge fan of broccoli, but when I came across this recipe online that claimed to be the best broccoli recipe ever, I had to try it. I removed a few ingredients to make it my own and to also make it gluten free, and it was absolutely delicious! As soon as it came out of the oven, I stood there and ate it til I almost ate it all. OOPS! 🙂 It was so good that I couldn’t stop. And fortunately, with broccoli, not being able to stop can’t be too terrible. 😉
So prepare yourself for the best broccoli recipe ever!!
1 lb fresh broccoli, pieces or florets
2-4 tablespoons of Extra Virgin Olive Oil
2 or more garlic cloves, thinly sliced
½ teaspoon sea salt
½ teaspoon pepper
2 tablespoons shredded Parmesano Reggiano cheese
⅓ cup grated Parmesan cheese
1 lemon, juice
1. Preheat oven to 425 F.
2. Place the broccoli in a large bowl. Add the olive oil, garlic, salt, and pepper and stir to get the broccoli completely coated. Add the shredded Parmesano Reggiano cheese. Stir so everything is well mixed.
3. Transfer to a lightly greased cookie sheet (TIP: Cover the cookie sheet with foil and grease the foil for easy clean up!)
4. Roast in the oven for 20 to 25 minutes, until the broccoli has browned. Remove from oven.
5. Cut the lemon in half and squeeze the lemon juice over the broccoli add the grated Parmesan cheese.
