I’ve made this recipe twice in the past two weeks and it is AMAZING! Simple to put together, but it does take some prep time and take some time to cook in the oven. But it is so worth the wait! My daughter even loves it!! [She’s 13 months old] 🙂

Instructions
  1. Preheat oven to 350°.
  2. Make sure the spinach is drained well.
  3. Combine spinach, ricotta, Parmesan cheese, egg, garlic, Italian seasonings, turkey, and salt and pepper in a medium bowl.
  4. Pour about 1 cup sauce on the bottom of a 9 x 13 baking dish.
  5. Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry.
  6. Take 1/3 cup of ricotta mixture and spread evenly over a noodle. 
  7. Roll carefully and place seam side down onto the baking dish.
  8. Repeat with remaining noodles.
  9. Use remaining ladle sauce and over the noodles in the baking dish. 
  10. Top each one with 1 Tablespoon of mozzarella cheese.
  11. Cover baking dish tightly with aluminum foil and bake for 35 minutes, or until cheese melts.

1 yellow 1 green 1 red 1 blue (or 1/2 blue depending on how much cheese you use) 1 purple 

2 roll ups equals one serving
