Today I am SO EXCITED to share this amazing 21 Day Fix turkey taco bake recipe with you. It was AMAZING!! And this made a huge serving! One pan equals 4 servings! My tummy was pleased!! Since my hubby is very picky with vegetables, I left them out. This can pair very well with a side salad so that you get your greens in! I added some vegetable into the ingredient list as ideas on yummy ones you can add if you don’t have picky eaters. 🙂

For my 21 Day Fixers, here are your container amounts:

1 Red, 1 Green {if you add the veggies}, 1 Yellow, 1 Blue, 1/4 Purple

21 Day Fix Turkey Taco Bake

4 servings

1 cup uncooked brown rice
3 cloves garlic, minced
16 oz lean ground turkey
1-2 tsp fresh lime juice
2 Tbsp Chili Powder
1 tsp Oregano
½ tsp Thyme
2 tsp cumin (optional)
1/3 cup Cilantro, chopped
Hot Sauce (to taste – optional)
1 cup Shredded Cheddar Cheese
1 (15 oz) can tomato sauce (low sodium)

Optional veggies to add, that I did not add:
1 yellow onion, chopped
Jalapeno, chopped
Red, yellow or green pepper,chopped


1. Preheat oven to 350. Spray a 9X13 baking dish with extra-virgin olive oil and set aside.

2. Boil brown rice in water on stovetop. Set aside. I used the Boil in a Bag brand, so it cooked in the microwave for 10 minutes and DONE!

3. In a large skillet, spray with extra-virgin olive oil or olive oil cooking spray, add garlic and optional veggies and sauté over medium-high heat for 1 minute.

4. Add ground turkey, breaking it up as it browns. Cook until meat is no longer pink.

5. Add lime juice and seasonings. Stir to combine. Adjust seasonings to your tastes.

6. Remove from heat – add rice, tomato sauce, 1/4 cup of cheese and hot sauce (if using) to the skillet and stir to mix well.

7. Pour mixture into baking dish. Top with remaining cheese!

8. Cover with foil and bake for 20 minutes.

9. Remove foil and bake an additional 10 minutes or until cheese is melted! Remove from oven and let the dish cool for about 10 minutes.

I served with a large dollop of PLAIN greek yogurt on top… just like sour cream! And extra hot sauce. 🙂

    This was delicious! I added green, red, and yellow bell peppers. The whole family loved it. Thanks for the great recipes!
