Today I am SO EXCITED to share this amazing 21 Day Fix lasagna skillet recipe with you. I love to try recipes firsthand before sharing them. I must say that THIS.WAS.AMAZING!!! I am a HUGE lover of lasagna, but I don’t eat it very often because heavy carb meals make me feel really exhausted. I saw a recipe for this on Pinterest, had to alter it a bit for my picky hubby, and he even really loved it! π
So where are my lasagna lovers at?! This recipe didn’t have many carbs in it, only 2 cups of rice for the entire recipe. The recipe has 4 servings, so there’s only ONE yellow container in each serving! And the servings are SO BIG! Big servings are my happy place. π The cheesy gooey-ness is just amazing. When you make it, be sure to invite me over to dinner. π
For my 21 Day Fixers, here are your container amounts:
1 yellow container (rice)
1 red container (sausage)
1 blue container (cheese!!!)
1/2 purple container (marinara)
1 teaspoon (olive oil)

- 2 cups brown rice cooked
- 1 pound Italian turkey sausage ground
- 3 cloves garlic minced
- 2.5 cups marinara sauce jarred
- .5 teaspoon oregano
- .5 teaspoon Italian seasoning
- .5 cup low fat mozzarella cheese shredded
- .5 cup low fat ricotta cheese
- 4 teaspoons olive oil
- 4 basil leaves sliced

Instructions

In a large skillet over medium-high heat, add 2 teaspoons of the olive oil.

Add the ground turkey sausage to the skillet and season with salt and pepper. As it cooks, break up into small pieces. Cook until browned, then drain any excess grease from the meat. Place the cooked meat onto a separate plate.

Add the other 2 teaspoons of olive oil to the skillet and add the garlic. Cook, stirring, until garlic has softened a bit. Approx 3-5 minutes.

Add the turkey sausage back in with the garlic, and add the oregano and italian seasoning, stirring until combined.

Add marinara sauce. Bring to a boil and then reduce to a light simmer. Allow the sauce and meat to simmer for about 10 minutes.

Season your rice with salt and pepper. Do not skip this step or itβll make for a bland dish. π

Add the rice to the sauce and meat mixture. Stir until thoroughly combined.

Top with mozzarella cheese and place skillet into the oven on a low temperature broil. The goal is just to melt the cheese on top!

Remove from the oven once cheese has melted and add dollops of the ricotta cheese before serving.

Add basil sprinkled to the top of the dish!

For the fix portions you have, what is the recommended portion size?

Thank you. It’s on my meal plan for tomorrow!!! I wasn’t sure if it was 1/4 of the pan or a cup serving. Have you ever tried to freeze and reheat for leftovers?
I haven’t – it goes too quickly!! LOL! I’ve just refrigerated and used the next day. π Definitely was still delicious! I’m excited to hear how you like it!! Are you working with a coach in a challenge group?
Any idea how to measure the serving size? A cup? A green container? I know you mentioned it was a 1/4 of the dish but when I’m making it for my family of six I plan on doubling the recipe. It will be hard to separate the dish into 8. Lol. Thanks. I can’t wait to try it.
Great question, Becca! I have to be honest in saying I have no idea! Thinking back to when I made it, the servings were definitely larger than one green container. Did you test it out by chance? What type of pan are you making it in…still a skillet? I can see how that would be a tough one to eyeball!
I just found this sight, what I have done is weigh out the “entire mass”, get out 4 bowls and go from there. I always re zero my scale, it’s strange how the same brand, color, etc. weigh slightly different. This way I don’t feel that I could be cheating hubby, or being to generous. lol.

Made this for supper tonight and it was great! I used Minute Rice multi-grain medley instead of all brown rice and just lean ground beef instead of sausage. All it needed was a little garlic powder to make it perfectly seasoned. I even got my husband to admit it was good π He really resists my fix meals!

Hi! I would probably just leave it out. I’m not sure what else you could sub it with that wouldnt make the recipe weird. π
I used cottage cheese instead of ricotta, because I didn’t have any on hand and it turned out great π

Hey Ally!! I actually don’t! π The reason is it was dreamed up for the 21 Day Fix plan [or any of the container plans from Beachbody], and on that plan we count containers rather than calories. I’m so glad you loved it!! Are you following any type of plan right now?
I made this but used cauliflower rice instead. Still turned out great! Yummy!

I’m going to make this today and was wondering ricotta is listed as a protein (red) in the 21 Day Fix book. Are you counting it in your protein or with the cheese in the healthy fat? And if the marinara is homemade it counts as a green correct? The fixate marinara recipe is listed as a green.
Angelique!! So sorry I missed this. Ricotta counted with meat yes π my marinara is store bought but you’re right it’s green if homemade!

I love this recipe so much. Made it at least a dozen times now. Hubby loves it so much too. I actually make my own turkey sausage-just add some seasoning to plain ground turkey. I’m not on 21 day program at the moment but I just love this one!!

I know you said the serving size was 1/4 of the pan. I made this ahead of when I actually ate it so I took it out of the pan. How would I measure it out according to what your containers measure out to be?
Hey love so sorry for seeing your comment so late! You have a great question! And honestly I do not know! LOL π One suggestion another lovely lady had was that she uses a measuring scale and weighs the entire recipe and then measures it to get 4 equal servings. π Did you love it?

I’ve made this three times now. Hubby and I love it! This time whe I made it, I added zoodles when I was cooking the garlic. They added little more dimension to it. I love to add veggies where and when I can!

Hi there! I am so excited to make this. I’m new to Beach Body and my coach, Tess Chavez, wanted me to look through these recipes. I’m wondering, though, if I need to add a green container to it, because of the tomatoes. Just wondering. This made me hungry, copying it down for my shopping list, so YEAH! I’m gonna try it!
