21 Day Fix Crockpot Recipe

I saw this 21 Day Fix crockpot recipe the other day when I was searching online for easy crockpot recipes to cook for dinners during the week. I found this one and modified it a good bit to please my picky husband 🙂 Anyone else have one of those? Anyway, I wanted to share the recipe.

21 Day Fix Crockpot Recipe – Cajun Sausage Soup

1 package of Cajun Style Sausage {I chose chicken sausage – yum!}
3 lb baby red potatoes
2 garlic cloves
2 cups brown rice, uncooked
32 oz chicken broth
1 6 oz can tomato paste
1 tbsp crushed red peppers
Pepper to taste
{You can add onion, but I didn’t because hubby doesn’t like onion}

Add chicken broth and tomato paste, stir. Cut sausage, potatoes, onion, and crush garlic, add to crock pot. Add rice and seasonings. Cook for 4 hours on high, or 6 hours on low.

Here’s the sausage I used… it’s yummy.

This recipe would be 1 red, 1/2 green {if you add the onion}, and 1 yellow per serving. {8 servings of 1.5 cup} You could serve with some veggies on the side if you also have a picky eater and need to leave out the onion. 🙂

    I’m wondering what I did wrong. Put everything in the crock pot — except the rice; it didn’t fit — and cooked it on low for 7 hours. The potatoes and onions were still raw; the sausage was overcooked. We added the rice afterwards which made it seem like rice and potato soup — the sausage was almost nonexistent at that point. And it wasn’t spicy–we added a lot of cayenne afterwards too.

      I’m not sure how that’s even possible – sounds like maybe a crock pot issue? Maybe the sausage was lying on the bottom of the crock pot and burned that way? I have no idea how the potatoes and onions wouldn’t cook in 7 hours.
