21 Day Fix Bacon Cheeseburger Pie Recipe

Bacon Cheeseburger Pie

This recipe was AMAZZZZZZING! I know I say that about them all, but really. It was so good. 🙂 My favorite kind of 21 Day Fix recipes are the ones that taste super sinful and decadent…but that are still healthy! I get excited! I love comfort foods and any sort of casserole or baked item like this is just amazing, no matter the season. 21 Day Fix Bacon Cheeseburger Pie in the summer? SURE!

This was another recipe that was hubby approved. If Kendall was old enough to eat this I’m sure she would approve, too! 🙂 This recipe makes 6 BIG servings.

Here’s what you need:

1 lb ground turkey

½ teaspoon sea salt 1/4 teaspoon pepper

1 cup uncooked quinoa or brown rice {I used quinoa, but it probably would have been even better with rice!}

½ teaspoon cumin

6 oz. can tomato paste

¼ cup apple cider vinegar

¼ cup Worcestershire sauce

1 Tablespoon Dijon mustard

2½ cups water

6 slices of turkey bacon, cooked and chopped

1 cup shredded cheddar cheese

Here’s how you make it:

Heat a skillet over medium heat.

Add the ground beef, onion, salt and pepper, and cook until the meat is browned, breaking up as it cooks. Drain any excess grease.

Stir in quinoa or rice, then add the cumin, tomato paste, vinegar, Worcestershire sauce, dijon mustard, and water, and stir well until combined.

Cover, bring to a simmer over medium heat, and cook for 20-25 minutes, or until quinoa or rice is tender.

Top with bacon and cheese, then place under your broiler or in a hot oven for 2-4 minutes, or until cheese is melted.

Serve with a side salad and TA-DA!
